Popular science / crafting technology "black technology", adding nitrogen to the beer

Aug. 10, 2019

In our common sense, the reason beer can produce foam is because it adds a lot of carbon dioxide, but carbon dioxide is not the only gas that can make beer foam.

In the ingot ring, nitrogen is popular among producers because of its characteristics. Whether it is the traditional Guinness, the major wineries in the United States, or even some of China's fine wine brands, nitrogen is used as a filling gas.

* Why use nitrogen

Nitrogen accounts for about 78.08% of the total amount of air. Because it is an inert gas, and it is colorless and odorless, it can effectively preserve the quality of beer.

Due to the extremely low solubility of nitrogen, nitrogen can create a relatively high pressure environment in the beer package. Under high pressure, the beer is poured into the cup to produce a dazzling effect of foam swirling. This visual impact is brought to the taster. Come to a special experience outside the taste.

The chemical properties of nitrogen are very stable, and it is better to preserve the flavor of the beer itself, while the carbon dioxide dissolves to form carbonic acid, which increases the bitterness of the beer.

* What is the difference between nitrogen and carbon dioxide filled beer?

In fact, nitrogen-filled beer and carbon dioxide-filled beer are well differentiated in morphology and have a world of difference in taste.

The most obvious is the difference in foam. The nitrogen-filled beer foam is as soft and soft as the milk cap. The bubbles are smaller and thicker. Even after pouring into the cup, the foam sinks instead of rising. Carbon dioxide-filled beer bubbles are not only large in size, but also rough in texture and very thin.

On the palate, nitrogen will produce a wonderful smoothness after touching the tip of the tongue, while enjoying the rich and long-lasting aroma of malt and hops; carbon dioxide gives more refreshing scent and a certain killing taste, as if The beer bounces behind the throat.

* Whether all beer can be filled with nitrogen

Not all craft beers are suitable for filling nitrogen, and nitrogen is only able to perform its true strength in a beer with a strong taste.

For Stout, Porter, IPA and other richly crafted craft beers, with nitrogen is like a icing on the cake, it will produce a great taste and full face value.

However, for beer such as Lager and Plzen, the filling of nitrogen is more like a snake, not only is it difficult to present a velvety foam, but also makes the original light taste more faded.

In fact, whether it is nitrogen or carbon dioxide, or other gases developed in the future, filled into beer, they are the wisdom of the practitioners and enthusiasts in the continuous exploration and practice.
